Applewood Smoked Pork w/ fresh Pico-Guacamole on a Grilled Cracked Wheat Pita

Sunday afternoon. The sunbreaks told me to get outside and tidy up the yard. As I walked by my newly purchased charcoal smoker on the back patio, it spoke to me…”let smoke somethin’ today”. “Ok”, I replied, “what should we smoke? Pork?” Just then the sun broke through the clouds and a pillar of light descended upon the back patio. I didn’t expect that kind of inspirational response from the elements…but I guess I was unaware at that time of what I a labor of love that I was in for.

So I headed off to get some goods: 5LB of pork shoulder and apple wood, a little more inspiration. While at the store(s), I received a call from my brother in law Scotty Mac as I was checking out and about to head to the house. He told me that my water bath in the smoker should be Dr.Pepper…I quicked grabbed a 20 oz. headed back to the kitchen to prep the marinade.
